“A rarity: the small West African island is hardly known and yet has a long and rich cocoa tradition. The small farmers of the CECAQ 11 cooperative cultivate a unique island cocoa that tastes very chocolatey and slightly fruity. An original chocolate with 75% cocoa content, surprisingly mild for a dark chocolate, with fruity-tropical notes and a very smooth texture.
Aroma notes: fruity, dried apricot, baguette
Taste notes: very mild for a dark chocolate, red cherries, nice roasted aromas, melts well, baguette notes, sharpness in the finish”
The taste description is quite accurate, although we would not really call it mild, as the “sharpness in the finish” they mention is definitely present—it has a distinct edge. The cherry and roasted aromas also come through clearly as flavour notes in our opinion.
