In this case, it’s a dark chocolate made with maple sugar.
To produce this, maple sap is (naturally) concentrated, and it is a widely used sweetener in Canada and the USA. In our view, it’s particularly enjoyable—we like adding a bit of maple syrup to our muesli from time to time, though that’s beside the point here.
In this bar, the maple sugar is combined with a 70% cocoa dark chocolate. This makes it easy to taste the difference compared to chocolate sweetened with “regular” sugar. Maple sugar brings a characteristic slightly darker, caramel-like flavor. According to Zotter, the overall profile includes notes of maple syrup, cream, fudge, and licorice, along with light fruity accents.
The makers further describe it as: “A classic with a special caramel effect: a dark chocolate with a classic cocoa content of 70%, sweetened with maple syrup. Maple syrup is made from the sap of the maple tree by processing it into syrup—a very popular product in the USA and Canada—and then crystallizing it. Maple syrup is quite similar to regular sugar, yet at the same time surprisingly different.”
