Cinnamon

**Cinnamon**: the well-known spice with its warm, sweet, and subtly spicy flavor. You probably recognize it as a rolled-up piece of tree bark (cinnamon is made from the inner bark of the cinnamon tree), or in its ground form. It has been used in cooking for thousands of years, in both sweet and savory dishes. And, of course, it pairs beautifully with cocoa! Cinnamon is most commonly mixed into chocolate in its ground form, but it can also be sprinkled on top, blended into a filling, or added as pieces of caramelized cinnamon or cinnamon sugar for extra texture. It also combines wonderfully with other flavors such as chili or orange.

Did you know there are different types of cinnamon? The two best known are **Ceylon** and **Cassia**.

*Ceylon cinnamon has a softer, more delicate flavor and is generally more expensive. It is most often found in specialty food stores and organic shops.
*Cassia cinnamon is the variety most commonly found in supermarkets. Its flavor is stronger, warmer, and slightly spicier.

You can also tell them apart by looking at a cinnamon stick. Ceylon cinnamon is usually pale yellow to light brown and consists of many thin layers, resembling a tightly rolled cigar. Cassia cinnamon, on the other hand, is made from a single thicker layer of bark, making it sturdier and coarser in appearance, with a darker reddish-brown color.
