Flowers

Flowers in chocolate may be less well known than nuts or spices, but they are increasingly being used as a flavour addition. Some cocoa varieties naturally have floral notes of their own, but real flowers can also be incorporated into chocolate. This can enhance the natural flavour of the cocoa or add an entirely new layer of taste.

Think of lavender, rose, elderflower, hibiscus, violets, and jasmine. These flowers can be used as dried petals, but also as extracts, infusions, or in fillings such as ganache. We have a few beautiful floral chocolate bars in our range—definitely worth trying!
