Rasberry

The combination of raspberries and chocolate is loved because the two flavours complement each other in an almost perfect way: the deep, rich taste of cocoa is balanced by the fresh, fruity character of raspberries.**

In bean-to-bar chocolate, raspberries are often added in the form of freeze-dried raspberry pieces or raspberry powder, so that too much moisture does not affect the chocolate. The flavour of raspberries also resembles some of the natural aromas that can already be present in cocoa — so it is no coincidence that these two flavours make such a wonderful pairing!
